Sweet Potato and Black Bean Tacos

This is hands down our simplest recipe, yet also one of the most delicious, not to mention trendy! Street tacos are all the rage, and we’re a fan of this one in particular because it's made all in one pan, keeping it simple! Plus, you can get extra creative with the ingredients of street tacos and no one will call you crazy. The following recipe is a vegetarian meal, but if your budget allows, it’s super easy to add some shrimp, sausage or diced chicken for some extra protein.

Ingredients:

Soft taco tortillas

1 can of black beans

1 onion

2 medium sweet potatoes, roughly the same size

1 red bell pepper

1 green bell pepper

1 pack of taco seasoning

Bag of shredded cheese

Sour cream (optional)

Pico de gallo (recipe to follow)


 

Directions:

Preheat your oven to 375 degrees.


Prep all your vegetables, starting with your sweet potatoes. These take longer to cook than everything else, so we get them started first. After peeling your sweet potatoes, slice them length-ways in half, or thirds if it’s on the larger side. This will allow you to cut on a flat surface, and you can cube them more evenly. Toss your sweet potatoes on a sheet pan with a little oil and salt and pepper. Add them to the oven for 15 minutes to get a head start. 


Meanwhile, chop up your other vegetables. 


After 15 minutes, remove your sweet potatoes from the oven, add your other vegetables, a touch more oil, taco seasoning and then give them a toss. 


Finally, add the black beans around the outside and add the whole sheet pan back to the oven for 10 minutes.


Warm your tortillas, fill with your vegetables, and top with cheese, pico de gallo and any other desired garnishes.

Fresh Pico De Gallo


Preparing this simple pico de gallo is super easy and fast, and gets even better over the next few days! The general proportions are shown below. You should have roughly twice as many tomatoes as onion/bell pepper, and the rest is to taste! Save the extra for a chips and salsa-like snack!


Ingredients:


Ripe tomatoes

Yellow or white onion

Bell pepper

Cilantro

Fresh lime juice

Salt

Dash of sugar


Directions:


Chop up tomatoes, bell pepper, onion, cilantro and jalapenos (if desired). Squeeze in plenty of fresh lime juice, salt, pepper and a little dash of sugar. Make ahead an hour ahead of time if possible so flavors can join together. Adjust lime, salt and pepper as needed. Will keep for one week in the fridge!
